When a QSO is transferred from WSJTX to RUMlogNG I've got it set so that does a lookup against HamQTH and QRZ.com. The name field in the log seems to be populated from the nick field on HamQTH or the fname field on QRZ, is it possible to use the adr_name field from HamQTH or concatenate fname and name from QRZ?

No, you have to do this yourself.

And am I right in saying that if I have UDP - WSJT-X - Save QSOs to logbook enabled the QSO will be saved without adding any details from HamQTH/qrz?

Correct. Only information available in WSJT-X will be saved. So you can't enter further data in the log requester.
